  3. Give everything a stir to get it all blended. Cover and cook on low for about 7-8 hours. I was pressed for time when I made this last – so I cooked on low for four hours and on high for two hours. Was perfect!.
  4. Shred meat. Remove and discard peppers. Spoon juices and tomatoes & onions from crock pot on top of beef (there's a ton of flavor and heat in there). Salt and pepper to taste. Serve with lime slices and white rice. Yum – hope you enjoy : ).
