- Use 5 of cardamom pods, split.
- Prepare 2 teaspoons of each cumin seeds, whole and ground.

- Get 2 tablespoons of vegetable oil.
- Provide 2 tablespoons of garam masala powder.
- Get 4 of bay leaves.
- Use 1 tablespoon of curry powder.
- Prepare 1 tablespoon of brown mustard seeds.
- Use 1 piece of dried cinnamon bark.
- Provide 2 cloves of garlic, crushed.
- You need 2 of medium onions, chopped finely.

- Take 1 teaspoon of salt (or to taste).
- Provide 1 (400 g) of tin chopped tomatoes.

- Prepare the spices. With a pestle and mortar gently crush the cardamom pods, cumin and coriander seeds until they "pop". Do not grind the seeds, just break the shells gently..

- Taste your curry. Add more chilli if you want it. The longer you cook it the more mellow the spices become and the better the flavour. Season to taste with salt. Add a little more sugar if it is too bitter for your liking..
