Excellent Chicken And Rice Casserole Recipe

To begin the chicken and rice casserole recipe there are a few items that need to be purchased or readied before beginning preparation.
Ingredients:
3 pounds of whole chicken
(Tip: Consider purchasing boneless, skinless, chicken breasts for a quick, easy, and healthier alternative to whole chicken. If this method is used, 2 cups of chicken broth must be used.)
1 can of condensed cream of mushroom soup
1 can of sliced mushrooms
(Tip: Fresh mushrooms can be used instead)
1 cup of sour cream
(Tip: For a reduced-fat meal, light sour cream can be used.)
1 large onion, sliced
1 cup of chopped celery
12 ounces of rice
(Tip: White or whole grain rice may be used.)
1 cup of dry white wine
(Tip: If you prefer, white wine can be removed from the recipe. Expect a slight alteration of taste from original recipe.)
1 1/2 teaspoons of salt
1 teaspoon of curry powder
1 cup of water
Directions
1. Place the whole chicken (or boneless, skinless chicken breasts) in a pot. Combine the water, wine (if desired), curry powder, salt, onion, celery, and chicken broth (if chicken breasts are used.) Cover, bring to a rapid boil, then reduce heat and allow to simmer for 1 to 1 1/2 hours until desired tenderness of meat is reached.
2. Remove from heat, strain and keep the leftover broth. Place both the broth and the chicken in the refrigerator to cool.
3. Cook the rice by following the directions located on the bag. Instead of water, use the broth from collected in step 2.
4. Preheat oven to 350 degree Fahrenheit (175 degrees Celsius).
5. Remove skin and bones from the chicken (if a whole chicken was used). Cut into small pieces and combine with mushrooms, and rice. Mix in the sour cream and soup.
6. Place in a greased 9 x 13 inch pan and bake for 1 hour.
