Easy recipes for chicken the whole family will love
Chicken has become a very popular meat used in many recipes. It has gained in popularity somewhat due to the fact it is healthier than many other meats. Easy recipes for chicken are plentiful; most everyone has their own ‘secret’ recipe while cooking chicken.
Here are some fairly easy recipes that are sure to please even the most meticulous eaters in your family.
Beginning with a chicken casserole straight from an old family recipe:
Quick and easy chicken casserole
2lbs chicken white or dark meat boiled and stripped from bone in somewhat small pieces
1 bag extra wide egg noodles
1 large can of cream of celery, or mushroom soup.
For creamier version add a small can of cream soup of choice*
1 large onion diced
1 can of peas, carrots, or corn or if preferred a mixture of all
2 boxes chicken flavored stuffing mix
Preheat oven to 400.
Boil noodles in stock from chicken.
Prepare stuffing.
Mix all ingredients except stuffing while noodles boil.
When noodles are done, mix the primary ingredients into them; place them in a large pan.
Spoon stuffing evenly over entire pan, place in oven for about 30-40 minutes to crisp the stuffing.
This dish is easy, fast, cheap and delicious! Enjoy!
Chicken Breasts
are a hit and can go well with nearly any side dish imaginable. There are many ways of cooking breasts that can be fast and fairly easy for the cook in a rush. For those who enjoy low ingredient count recipes, this one is sure to be a pleaser.
Chicken breasts (as many as you need per family size) can be boneless, skinless if preferred
Olive Oil or low fat butter
McCormick Montreal Chicken seasoning (can be substituted for Lemon Pepper or any other favorite seasonings, or combinations of them)
Crumbled Crackers such as Ritz or any other type preferred
Aluminum foil
Pre-heat oven to 400. Wash chicken, remove skins if desired, and cover broiling rack or other baking dish with foil.
Place breasts on top of foil and brush with olive oil or butter. Sprinkle top and bottom of chicken lightly with seasoning, and then crumbled cracker crumbs.
Take another piece of aluminum foil and cover the entire pan, sealing the chicken in. Put a few small slits in foil to allow steam to be released. Place pan in oven and bake for 40 minutes give or take, depending on breast size. For larger breasts it will take longer, smaller ones obviously will take less.
When cooking chicken it is very important that it is thoroughly cooked to prevent illness. Be sure the juices no longer have a pink tint to them, or use a thermometer to gauge temperature in the middle. Chicken must be cooked to 170 degrees to be safe for consumption. When chicken is done remove foil and serve.
Chicken salad is good on not only a bed of lettuce, but great in a sandwich as well. There are many options when it comes to chicken salad recipes. One that is easy and fast is usually the most popular.
Here is a recipe that can be added to, or taken away from as well as substituted to your tastes.
Rosemary Chicken Salad:
3 cups roasted chicken breast
1/3 cup chopped onion, use your favorite-green, purple, yellow, Vidalia.
¼ walnuts, again, use your favorite almonds, pecans, sunflower seeds
¼ cup plain yogurt
¼ cup mayonnaise
1 teaspoon Dijon mustard
1/8 teaspoon Rosemary, can be deleted or substituted according to preference
1/8 teaspoon salt
1/8 teaspoon pepper
Combine all ingredients in a bowl. Chill for about an hour. Place generous amount on a bed of lettuce, or use in sandwiches.
Cooking chicken in a slow cooker is a great easy way to have a meal that screams down home. Some say there is no better way to cook any meal. Slow cookers use time as their advantage. When a meal is cooked for several hours in a crock-pot, the seasonings and natural flavors are intensified.
Here is an easy slow cooked stew that is sure to please the whole family. Feel free to add to it or take away as desired.
2lbs boneless skinless breast, washed and patted dry
3 onions diced
2 large potatoes peeled and cubed
2 14 ounce cans of chicken broth
2-4 celery stalks sliced
2 cups of frozen veggies of choice, many use mixed veggies or only your favorites* peas and carrots are really good in this (fresh carrots are best in this recipe)
4 chicken bouillon cubes
Combine all ingredients in slow cooker except for frozen veggies, if using fresh carrots add them in now.
When meal is nearly done, add frozen veggies for at least 30 minutes.
Cook on low for 7-9 hours until done.
You can speed it up by cooking on high temperature for 4-6 hours.
Season with salt and pepper to taste. This meal is great the first time around, but seems to taste better the next time. You can continually add leftovers and other foods to any remaining stew to make it last longer.
Many people love Mexican food. Quesadilla is a popular choice. Chicken can be used to make this quick yummy dish.
Chicken Quesadilla:
11/2 cup finely chopped pre-cooked chicken breast ( many use more chicken depending on preference.)
This can be seasoned with taco seasoning by placing in a small amount of water and cooking long enough to dissolve taco seasoning. Remove chicken and drain excess water.
1-2 8-ounce bags of finely shredded cheese of choice
½ cup finely chopped onions, bell peppers and any other veggies you want to add.
Bottle of salsa, picante or other desired sauce.
1package of large 10” soft tortilla shells
Non- stick cooking spray or oil
Spray large skillet or flat griddle pan with cooking spray, or spread small amount of oil over entire surface. Turn burner on medium and let pan warm for a moment.
Place a shell over pre-warmed pan and add chicken desired.
At this point, you can add onions, peppers or other chosen veggies, or completely omit. Next, sprinkle desired amount of shredded cheese over the entire shell but leave at least an inch away from edges to prevent over-flow. Place another shell over the ingredients and previous shell.
Let it cook for a minute, raise last shell and see if cheese is melting, if so flip it over carefully and leave for a few moments. Remove
Quesadilla from pan, slice it as you would a pizza, and serve with choice of sauce for dipping.
